Ingredients for making iced pineapple cake:

For mass:

 1½ cups of wheat flour (210 grams)

 1 cup of sugar (160 grams)

 1 cup of milk (240 milliliters)

 4 egg units

 1 tablespoon of baking powder

For the filling:

 1 unit of pineapple

 1 can of condensed milk

 1 cup of milk (240 milliliters)

 3 units of egg yolk

To the roof:

 3 units of egg white

 2 cartons of cream

 6 tablespoons of sugar

How to make Pineapple Ice Cream Cake:

Start by making the iced pineapple cake through the dough: beat the egg whites in snow until firm, then add the sugar and yolks, little by little, while mixing.

Then, while stirring, add the milk and then the sifted flour and yeast. Mix the ingredients well.

Pour the pineapple iced cake dough into a round or rectangular pan, properly greased and floured. Bake in a preheated oven at 180ºC for about 30 minutes.

While the cake bakes, prepare the filling: peel and cut the pineapple into very small pieces, more or less like the ones in the photo.

Tip: So that the pineapple does not become bitter, cook it for a few minutes in a pan with sugar, until it turns into a syrup. Allow to cool before next step.

Place the pineapple in a pan together with the two milks and the sifted yolks. Place over medium heat and cook, stirring constantly, until thick. This will be the filling of the pineapple iced cake.

When the cake is baked, let it cool. Then unmold, cut in half and fill with the previous preparation.

Now prepare the icing for the pineapple iced cake: beat the egg whites in snow until firm, and add the sugar. Add the cream gradually, while mixing gently, in a circular motion, from the bottom to the top.

Assemble the cake and spread the icing over it. Wrap in aluminum foil and set aside in refrigerator for 2 hours. When serving, sprinkle grated coconut and enjoy the iced pineapple cake. Enjoy your food!
